How freeze-drying works

Water is frozen, then removed as vapour without passing through the liquid phase. That is only possible below the triple point of water, 0.01 °C at 611.657 Pa, so the chamber runs under deep vacuum while the shelves add just enough heat for the ice to sublimate.

  1. Freezing. The product is frozen solid on the shelves or in a blast freezer.
  2. Primary drying. Under vacuum, ice sublimates. The product must stay below its collapse temperature, or the structure shrinks and melts back.
  3. Secondary drying. Shelf temperature is raised to drive off water bound to the solids, down to the agreed residual moisture.

Because the ice leaves an open, porous structure, freeze-dried fruit keeps its shape and colour and rehydrates quickly. The same porosity makes it absorb moisture from the air, so packaging matters as much as drying.

Phase diagram of water with the freeze-drying path Schematic. The path starts as liquid at atmospheric pressure, cools into the solid region, drops in pressure below the triple point, then crosses the sublimation curve into vapour when heat is added. Pressure (log) Temperature Triple point 0.01 °C, 611.657 Pa Ice Liquid Vapour 1 freeze 2 vacuum 3 heat: sublimation
Schematic, not to scale. Triple point values as defined for the ITS-90 temperature scale.

How much dried product will you get?

The solids in the raw material stay; only the water leaves. So the dried weight follows from two moisture figures:

dried kg = raw kg × (1 − raw moisture) ÷ (1 − final moisture)

Real yields are a little lower because of trimming, sieving and handling losses. We report the actual yield from your trial batch.

Estimated dried output

103.1 kg

About 9.7 kg of raw material per kg of dried product.

OEM and private label

Bring a finished product idea or just a raw material. For ODM we run a trial batch, report yield, moisture and water activity, and send samples before you commit. For OEM we produce to your approved spec and pack under your brand. Formulas and artwork stay yours.

What to send us

  • Target product and specification
  • Annual volume and first-order quantity
  • Packaging and label artwork, or a brief
  • Destination market, so labels meet its rules

Buyer questions

What is the minimum batch?

It depends on the product and on how full a dryer chamber can be loaded. Send the product and volume through the form and we reply with the minimum for that product.

Can you dry the extract we already make?

Yes. Send its solids content, viscosity and any heat limits, plus a sample. We run a trial and report the result before quoting production.

Do you make health claims for botanical powders?

No. We report process and test results only. Depending on your market, botanical products may be regulated as food, supplements or traditional medicine, and registering the product and its label is the brand owner's responsibility.

Why is packaging so important for freeze-dried products?

The porous structure absorbs moisture from the air quickly, which makes products sticky or caked. We pack in low-humidity conditions with nitrogen flushing and high-barrier film.

Is chinafreezedried.com the same company?

Yes. chinafreezedried.com now redirects to this site.

What are your payment terms?

[EDIT: payment terms]

Products are made to the customer's specification as food ingredients or raw materials. This site makes no health or medical claims. Brand owners are responsible for product registration, labels and claims in their markets.
